Vino de páramo.
Fundada en 1994, Valtravieso Bodegas y Viñedos se encuentra en el término de Piñel de Arriba (Valladolid), dentro de la Finca La Revilla, que posee 60 hectáreas de viñedo fundamentalmente de tempranillo (tinto fino), variedad autóctona de Ribera del Duero. Junto a ella, se cultivan las uvas internacionales merlot y cabernet sauvignon. Estas plantas crecen en un páramo, a una elevada altitud de 915 m, siendo uno de los viñedos más altos de la región, sobre suelos calizos muy pobres. Este viñedo en altura y este tipo de suelos favorecen unos procesos de maduración más largos; por ello, Valtravieso presume de ser la última bodega de Ribera del Duero en vendimiar, y tiene unos rendimientos menores por hectárea. Valtravieso nos traslada a un territorio singular dentro de la Ribera del Duero: uno de los páramos calizos más altos de esta región, a más de 915 m de altitud. Desde este lugar único en el que se ubican nuestros viñedos y bodega, perseguimos la más alta calidad en todos nuestros procesos, con la mínima intervención tanto en el campo como en nuestras elaboraciones. Así, conseguimos vinos de altura, en páramo calizo, con una personalidad y estilo únicos en la zona, elegantes, de acidez natural, con toques minerales y frescos. Estos factores se traducen en vinos con una acidez natural mayor que en otras zonas, apreciándose una mayor frescura y otras cualidades singulares marcadas por la elevada altitud. La incidencia de viento en la Finca La Revilla es otro factor importante en la calidad de los vinos de Valtravieso, ya que elimina los asentamientos de hongos, bacterias e insectos de forma natural, además, en el viñedo se controlan plagas y enfermedades con tratamientos que son admitidos por la norma de Protección Integrada Del Viñedo (Paso anterior a Cultivo Ecológico). Por otro lado, la bodega cuenta con pequeñas estaciones meteorológicas que permiten adelantarse en las previsiones.
Viticultura.
Cuidamos nuestro viñedo de forma eco-lógica, a través de un trabajo manual, con el máximo respeto y la mínima intervención, sin herbicidas ni insecticidas, y seleccionando en el propio viñedo la mejor calidad de uva. Nuestro objetivo es elaborar vinos que reflejen la personalidad de nuestro páramo, nuestra seña de identidad.
Vinificamos y criamos cada parcela por separado para obtener la máxima expresión varietal, y defendemos que la madera no debe enmascarar la personalidad de la uva y de nuestro terroir singular. Tenemos mucho respeto por la uva y buscamos conservar la frescura, acidez natural y mineralidad que aporta nuestro páramo.
