La familia Stallmann-Hiestand tienen una tradición vitícola de siete generaciones. Desde 1975 Werner Hiestand lleva la gerencia de la bodega. Bajo su dirección, en la finca, con viñedos y campos de cereales, se construyó una moderna bodega con embotellado propio. Desde 1988 se dedica exclusivamente a la elaboración de vino. Uelversheim es un pueblo de bodegueros en Hesse Renania, la región vinícola alemana más grande y se encuentra cerca de la ciudad vinícola de Oppenheim, sobre el Rhin. Cuentan con 16,5 hectáreas en producción, con las variedades Riesling, Sylvaner, Pinot Noir y Gewürztraminer. La media de edad de las cepas de 15 a 30 años. Por lo general la vendimia es manual es a mano, y la fermentación es controlada en depósitos de acero, los mejores Riesling tienen una crianza de unos meses en fudres de madera.

El terruño.

Geograficamente la prolongación de Pfalz, hacia el norte en la ribera izquierda del Rhin. Con sus más de 26.000 hectáreas representa la cuarta parte del viñedo alemán. Debido a su superficie hace que las características de los suelos y los climas sean muy diferentes, con colinas suaves como islas en una región con un ambiente muy plano y poca vegetación. Se diferencia entre los viñedos pegados al Rhin con un terreno de arcilla roja pizarrosa con mucha inclinación, Rheinfront, donde se producen vinos finos y minerales y las zonas en la parte interior, Wonnegau, donde se encuentra en la altura de estas colinas debajo de la arcilla típica un terreno calcáreo, por lo que se destacan los vinos de estos pagos por su opulencia. Excelente maduración de Riesling y sus híbridos. Aromas cítricos muy maduros, pomelo rosado, lima, piña y densos dominan. Los vinos envejecidos suelen expresar por el terreno arcilloso un aroma conocido como petróleo.

Los vinos.

Alemania produce esencialmente vinos blancos, vinos frescos, que conservan su frescura y elegancia durante años. Las condiciones climáticas, hace que el cultivo de la vid se desarrolle mejor en la zona oeste y sur del país, cercanos al Rhin. Las variedades que destacan es el Riesling, la más representativa, Gewürztraminer, Müller-Thurgau, Sylvaner, Ruländer y Pinot Blanc. También elaboran vinos tintos, no al mismo nivel que los blancos, pero van teniendo más presencia, las variedad más utilizadas son, Pinot noir, Lemberger y Domfelder. La clasificación de los vinos alemanes es algo compleja. En los vinos secos (Trocken), basados en el concepto del terroir, Genéricos, Vinos de pago y Grandes Crus (Grösses Gewächs). Los Prädikatswein, es otra clasificación basada a los gramos de azúcar, que se distinguen en: Kabinett: Entran en ellos los vinos con menos azúcar residual, se elaboran de forma tradicional. Spätlese: Auslese: También vendimia tardía pero ya afectadas de Botrytis Cinerea, sensación de dulzor ya es considerable, pero compensada por la acidez. Beerenauslese: Aquí ya aparece la podredumbre noble, excelentes vinos dulces. Aquí se pueden incluir los Eiswein, vino de hielo, recolección con las bayas congeladas por la viene, para concentrar más azúcares. Trockenbeerenauslese: Uva ya pasada, seca debido a la botrytis, seleccionada, aún con más azúcar residual, suelen ser utilizados para larga guarda. Tafelwein, vino de mesa. Landwein, mínimo de alcohol entre 9-10%. Existen unas 13 zonas con Qualitätswein, sello de calidad: Ahr, Baden, Franconia, Hessische Bergstrabe, Mittelrhein, Mosel, Nahe, Palatinado, Rheingau, Rheinhessen, Saale-Unstrut, Sajonia y Württemberg.
