Pongámonos en situación.
Una región de más de 2.000 años, con una variedad que únicamente se da en estas 300 ha, al lado de Barcelona. Un suelo granítico, el sauló, bajo en nutrientes, mantiene una acidez fresca, larga absolutamente singular combinada con un nivel de maduración fantástica que dejan mostrar la tipicidad de la Pansa Blanca, variedad que tiene una capacidad de guarda impresionante. Raventós de Alella no es solo un proyecto singular, sino que es la máxima expresión de la obsesión de una nueva generación que quiere mostrar al mundo la importancia real de una región y una variedad. Alella y la Pansa Blanca son para este proyecto la misma cosa. No es un proyecto historiográfico para documentar, como era la vida de hace 2.000 años. Es de esos descubrimientos que los elaboradores apasionados, con suerte, hacemos alguna vez en la vida. Ya lo estamos consiguiendo, pero no pararemos hasta que pongamos esta Pansa Blanca donde merece estar.
La bodega.
Bodega localizada entre viñedos viejos y bosques del interior de la cordillera litoral que divide la DO Alella. Desde la primera añada elaborada en la bodega moderna, el 1981, la filosofía ha sido la extracción de las máximas posibilidades de la variedad genuina de la zona: la Pansa Blanca. El carácter innovador, vanguardista e internacional de la bodega ha dado unos vinos en constante evolución, manteniendo al máximo el respeto por el producto natural y la identidad de la zona. La uva pasa por la mesa de selección, se prensa entera y se fermenta a baja temperatura procurando preservar las propiedades de la fruta. Todas las parcelas que podemos las prensamos y vinificamos por separado. El uso de depósitos de fermentación pequeños y barricas nos ayudan a vinificar por separado e ir descubriendo las propiedades de cada parcela. Investigamos y descubrimos cosas nuevas cada día. Desde el nacimiento del vino Marqués de Alella (actualmente Raventós de Alella), sus viñedos han tenido que convivir con la urbanización creciente de estas tierras cercanas a Barcelona. La ampliación del Parque Natural de la Sierra de Marina ha garantizado recientemente la conservación del patrimonio vitícola y la preservación del entorno natural.
La materia prima.
En Marqués de Alella somos conocedores que una gran parte del éxito en la elaboración de vinos recae en la materia prima, ya durante la vendimia y el transporte hasta la bodega se tiene el máximo de respecto a la integridad de la uva con el fin de asegurar sus características: por la vendimia manual, la recolección y el transporte se realiza en cajas de 20 Kg. Además, en la recepción en bodega, toda la uva también es seleccionada según el grado de maduración y su sanidad a partir de su paso por la mesa de selección. Las partidas de uva con el grado de madurez óptimo realizan una maceración prefermentativa para incrementar su tipicidad aromática. Marqués de Alella realiza el prensado con uva entera en prensa neumática y al mosto flor obtenido se le aplica un desfangado estático en tinas de volumen pequeño con el fin de separar el mosto líquido de los sólidos en suspensión. Con estas técnicas se obtiene un mosto mucho más límpido sin la adición de adyuvantes enológicos y manteniendo el máximo de características primarias de la uva.
Los procesos.
Los vinos de Marqués de Alella fermentan a baja temperatura controlada en depósitos de acero inoxidable o en barricas nuevas de roble francés tipo Allier. Debido a la baja temperatura, las fermentaciones son lentas y se pueden prolongar hasta 3 meses. De esta manera, el vino se mantiene en contacto con las lías finas obteniendo una mayor complejidad aromática y gustativa. Al mismo tiempo, esta fermentación prolongada permite la autoclarificación del vino. Así se conserva mejor sus características aromáticas y su intensidad ya que se reduce el número de trasiegos del vino a realizar. Los Marqués de Alella, en las barricas, una vez finalizadas las fermentaciones alcohólica y malo-láctica, empieza la crianza del vino. Durante la crianza se realiza la práctica del battonage (remover las lías de dentro de la barrica) para redondear el gusto y el aroma del vino. La duración de la crianza en barrica se determina por cata y puede variar según la añada. Finalmente, los vinos de Marqués de Alella son estabilizados y filtrados para volverlos más límpidos y brillantes para tenerlos a punto por su embotellado.
