Historia de vinos singulares.

En 2006, los hermanos Toni (Coca) y Miguel (Fitó), hijos de agricultores del Alt Penedès, despúes de una larga trayectoria dentro del mundo del vino y quienes vendían la uva de su viñedo a productores ajenos, deciden aprovechar sus recursos propios y se lanzan a la aventura elaboradora para crear vinos singulares, diferentes, arriesgados. Nace así Coca i Fitó, con Toni Coca al cargo de la dirección técnica labor a la que había dedicado ya parte de su vida profesional en otras bodegas de Cataluña y con Miguel Coca al frente de la prospección comercial de la bodega. A sus Coca i Fitó, que ven la luz en 2006, se unen en 2007 los vinos de la gama Jaspi, elaborados a partir de uva comprada a viticultores de la zona y producida bajo las instrucciones enológicas de Toni Coca, y que pretenden transmitir nuevas sensaciones, con precios ajustados y una magnífica relación entre calidad y precio. En 2010 nace el nuevo Jaspi Maragda, un tinto que recalca aún más el carácter singular de la firma. El viñedo, de cultivo ecológico y con una edad de los 15 a los 80 años, se ubica en el valle de Falset (en municipios como Marçà, El Masroig, Falset, Capçanes, Guiamets y La Serra dAlmos), en una zon de pobre composición orgánica y clima seco, que aporta mineralidad y concentración en los vinos. Cada parcela y variedad son elaboradas independientemente y de forma tradicional, buscando el no alterar la idiosincrasia y singularidad que aporta cada terruño. Los vinos son criados en barricas de 225 litros mayoritariamente de roble francés, con tostados medios de varios toneleros, buscando el aporte de complejidad y matices a los vinos.

Elaboración ecológica.

Llevan a cabo un cultivo ecológico e integrado en la viña, con un control de la maduración de la fruta por parcelas y variedades. Realizan vendimia manual en cajas de 15 kilos con selección precisa de la uva. Cada parcela y variedad se elabora de forma independiente para sacar el máximo partido de cada terruño. En las elaboraciones intentan ser lo más respetuoso posible para no alterar todo aquello que el terreno les aporta. Para la crianza utilizan barricas de 225 litros de roble francés principalmente, y una parte de roble americano de tostado medio (barricas procedentes de diferentes fabricantes), todo ello para obtener más complejidad, matices y singularidad en cada vino que elaboran.
