Español [ ES ]La bodega.
Bodegas y Viñedos Ponce es una bodega familiar trabaja exclusivamente con uva bobal de la denominación de origen Manchuela. Todos los trabajos de cultivo de la uva y elaboración del vino se hacen de forma artesanal, según las directrices del cultivo biodinámico, es decir cultivo 100% ecológico que aprovecha las fuerzas y ciclos de la naturaleza para extraer los mejores resultados de las cosechas.
Nuestro viñedo.
La familia contaba en 2005 con 17 hectáreas propias que junto con las que se han ido adquiriendo por contratos con viticulturas en la actualidad trabajamos nosotros mismos un total de 35 hectáreas de la variedad bobal con una edad del viñedo desde los 30 a los 85 años.Todo el viñedo se trabaja de forma tradicional, poda en vaso y casi exento de cualquier tratamiento químico, solamente se trata con azufre. Nuestro viñedo está situado a una altitud de 700-820 metros sobre el nivel del mar con suelo en su mayoría arcillo-calcáreo exceptuando algunas parcelas en las que predomina la caliza .En la actualidad con las nuevas parcelas que hemos adquirido tenemos un total de 32 parcelas diferentes por lo cual tenemos muchas opciones para conseguir lo que buscamos en cada uno de nuestros vinos. Actualmente la edad media de nuestro viñedo es de aproximadamente 50 años.
La vendimia.
Una vez estimado el momento idóneo para la vendimia, comienza la recolección de la uva que se realiza tan sólo por la mañana, para asegurar que la entrada de uva en bodega se produce a baja temperatura. La recolección se realiza manualmente en cajas, por los propietarios y sus familiares,
quienes comienzan con la selección del fruto en la propia viña, descartando aquella que no consideren apta para la calidad de sus vinos. Entre principios de septiembre y hasta casi finales
de octubre, se recoge la uva de forma escalonada, en función de parcelas, ya que se vinifican por separado, para tratar de aportar distintos matices a los vinos. Una vez se encuentra la uva en la bodega, se introduce en una cámara frigorífica con la finalidad de bajar su temperatura hasta aproximadamente 10ºC. El rendimiento máximo de vendimia por día es de 4.000 Kgs, que son los necesarios para llenar una de las cubas donde va a transcurrir la fermentación alcohólica de los mostos, y donde se tratará de respetar y potenciar los matices aportados por cada viñedo.
Elaboración.
Durante todo el proceso de vinificación se mantiene una pauta indiscutible, el total respeto a la uva. Al igual que en el viñedo, en la bodega se trabaja de forma tradicional mediante pisados y suprimiendo la utilización de bombas, salvo en el sangrado. La duración de la maceración depende del vino que queramos obtener siempre buscando vinos frescos, largos y equilibrados. El prensado se realiza mediante una pequeña prensa vertical la cual es cargada de forma manual para no alterar lo más mínimo el mosto. Los rendimientos obtenidos son muy bajos para no extraer sabores ni aromas que puedan resultarnos desagradables. En ninguno de nuestros vinos utilizamos levaduras seleccionadas, la fermentación alcohólica es inducida por la flora autóctona presente en la uva. De igual forma, no es aportado ningún tipo de aditivo tan sólo adicionamos una pequeña dosis de sulfuroso en el momento del encubado.
