La bodega.

Vinyes dels Aspres es un bodega ubicada en el extremo nordeste del DO. Empordà, en la población de Cantallops. La bodega se encuentra en Can Batlle, masía agrícola del siglo XVII, donde desde siempre se había elaborado vino y aceite, e incluso tapones de corcho procedente de los alcornocales cercano. Cabe destacar la floreciente etapa a principios del siglo XX encabezada por Narcísa Vicens, la “abuela maestra”, así como el hecho que una de sus hijas se casara con Eduard Toldrà, célebre músico y compositor que, verano tras verano, llenó Can Batlle de música y cultura. A finales de los noventa, los herederos decidimos retomar la labor, acondicionando y restaurando la bodega y acomodándola a las exigencias de hoy en día para realizar la vinificación. Actualmente disponemos de una prensa neumática para poder elaborar con la máxima calidad las vinificaciones blancas, y doce depósitos de acero inoxidable a temperatura controlada para las maceraciones y fermentaciones de los tintos. En la bodega antigua es donde envejece el vino en barricas, todas de roble francés de Allier, y donde reposa en su evolución final en botella. Actualmente esta bodega está climatizada con una temperatura y humedad constantes para favorecer la buena evolución de los caldos. La madera, la técnica y, sin duda, la historia impregnada en los muros de la bodega nos ayudan a definir el perfil que deseamos para cada uno de nuestros vinos.

Los viñedos.

Sus viñedos, mayoritariamente plantados con garnacha y cariñena, se extienden a los pies de la Sierra de la Albera, muy cerca de la frontera con Francia, en el pueblo de interior más septentrional del Alt Empordà, en las estribaciones del macizo de la Albera, un territorio de suaves ondulaciones a los pies del Pirineo mediterráneo. En este rincón, muy agreste, es donde se encuentran nuestras viñas, todas ellas propiedad de la familia desde hace generaciones. Disponemos de unas treinta hectáreas de viña inscritas en la Denominación de Origen Empordà, con una media de edad de treinta años que se distribuyen en 14 parcelas. Trabajamos seis vías de garnacha ("lledoner" en el Empordà), en sus variantes blanca, roja y negra. En S'Alou, El Mallol y El Remolinar, la blanca, y en la Costa y Vallena, la garnacha roja. Els Cofins y la parte más baja de El Mallol están ocupados por la otra gran variedad tradicional, la cariñena, heredera histórica de estos parajes. A las variedades autóctonas, hay que añadir las plantaciones modernas de cabernet sauvignon, syrah y merlot, que completan la personalidad de nuestros vinos. En Grapanelles, en El Camp dels Clots y en El Quintà, encontramos el cabernet y en Els Mallolets de dalt y Els Mallolets de baix, el merlot y el syrah respectivamente. La conjunción de la tierra y la tramontana, el viento característico de la comarca, condicionan de una forma muy notable el rendimiento de las viñas, siendo la producción media inferior a los dos quilos por cepa. Este componente, junto con un esmerado manejo agronómico y la posterior elaboración de uva en la bodega, son la clave para la obtención de buenos vinos.

La elaboración.

Somos sensibles a la preservación del medio ambiente, no utilizamos ningún producto de síntesis agresiva ni en el manejo de la viña ni en la conservación del vino. Preservamos el paisaje y las viñas que hemos heredado de generaciones precedentes. Trabajamos y recogemos solo uva de nuestra propiedad. Disponemos del ciclo de producción completo: desde la viña hasta la copa. Potenciamos las variedades tradicionales más adaptadas al país y al mismo tiempo con una personalidad más atrevida, que diferencian los vinos y los hacen singulares. Usamos técnicas antiguas y solventes para hacer el vino, buena madera para envejecerlo y dispensamos muchas atenciones, desde el prensado hasta el embotellado. Innovamos, experimentamos con nuevas técnicas y variedades, intentando siempre la superación, aprendiendo de los errores y aprovechando los aciertos.
