Verdaderas catedrales.
Nuestras viñas se encuentran situadas en las dos zonas de calidad superior de la Denominación de Origen: son las tierras de albarizas de la Sierra de Montilla y de los Moriles Altos, cuya especial contextura permite la maduración óptima de la uva y la obtención de "mostos" de extraordinaria calidad. Para que los vinos generosos de Pérez Barquero adquieran las magníficas cualidades que los distinguen, a la contextura albariza del suelo, a la riqueza y finura de la uva y al clima único de Andalucía, es necesario añadir un proceso de envejecimiento natural. En las Bodegas -verdaderas catedrales por su estructura, quietud y magnificencia-, después de una rigurosa selección, se "rocía" el vino en botas de roble americano alineadas en cachones.
Elaboración.
A la tradición artesanal, Pérez Barquero ha añadido tecnología de vanguardia, lo que facilita una perfecta conservación de nuestros vinos durante largo tiempo, tras abandonar su medio natural de crianza. Tratamientos frigoríficos para precipitaciones de bitartratos, inertización, pasteurización, microfiltración y exhaustivos controles de calidad garantizan plenamente la estabilidad de nuestros vinos. El embotellado se desarrolla en un ambiente de máxima asepsia, en unas instalaciones modernísimas, dotadas de las técnicas más avanzadas, que representan la garantía última, previa a la comercialización nuestros vinos.
