Español [ ES ]Proyecto purista que busca recuperar un estilo de vinos anterior a la revolución del Priorat,con una filosofía que rescata la expresión más pura de la Garnacha y la Cariñena. Dominik Huber y Eben Sadie cruzan sus caminos en el año 2000 gracias a la bodega Mas Martinet. Al año siguiente, el destino los vuelve a reunir tras pasar seis semanas vendimiando las uvas de la familia Pérez en Cims de Porrera. Estos dos hechos puntuales fraguan una amistad que les lleva a trabajar juntos durante dos meses en Sudáfrica y posteriormente a iniciar un proyecto personal en Priorat. Con la ayuda de la familia Pérez, que les permite comprar parte de sus uvas y elaborar en un pequeño rincón de su bodega, vinificaron su primer vino, el Dits del Terra 2001.
Después de dos años de andadura en la bodega Cims de Porrera, se mudan a su propia bodega en la comarca de Torroja del Priorat, hasta que en 2007, cuando Dominik se establece definitivamente en Priorat, se inicia un segundo periodo en Terroir al Limit. Dominik se ha dado cuenta de que la combinación de madurez y concentración de las uvas, el proceso moderno de vinificación que busca la extracción y la crianza en barricas de 225 litros, no mostraba la autenticidad de esta región. Comienza a vendimiar antes, se deshace de las barricas pequeñas, y cambia la vinificación extractiva por un estilo más borgoñón: fermentación de los racimos enteros, sin despalillar, sin remontados, haciendo más una infusión que una extracción con las uvas. Empezó también a criar los vinos en cubas de 1200 a 3500 litros y barricas de 500 litros.
La bodega entra en una tercera fase, en la que Eben Sadie decide concentrar su tiempo y esfuerzos en su bodega en Sudádrica y se desliga de Terroir al Limit. Por otro lado, pronto se dan cuenta de que no sería suficiente aplicar una viticultura orgánica y biodinámica para añadir tensión y vitalidad en sus vinos. El calentamiento global les ha forzado a poner toda su energía en la viticultura sostenible, en la creación de suelos llenos de vida, convirtiéndolos en esponjas capaces de retener el poco agua que reciben. La humedad y la vida en los suelos son los conductores del auténtico carácter del viñedo que quieren poder reconocer en sus vinos: ligeros y fluidos, con tensión y vitalidad, los verdaderos vinos de la región.
