Evolución y experimentación.

En Viníric aplicamos conocimientos diversos: desde los tradicionales, como el seguimiento de las fases lunares y el uso de abonos naturales, hasta las técnicas más innovadoras: fermentaciones en frío, inertizaciones y otros. Evolución y experimentación, este es el estilo de Viníric. Actualmente se trabajan 8 hectáreas y 4 más en proceso de plantación donde las protagonistas son las variedades autóctonas garnacha tinta y garnacha blanca que conviven con el xarel.lo, macabeo, monastrell, tempranillo y syrah.

Perseverancia y Pasión.

La fórmula de la bodega Viníric. 8 hectáreas de viñedo en Calonge en la D.O. Empordà (provincia de Girona). En nuestros vinos las variedades protagonistas son la garnacha negra y la garnacha blanca. Tenemos presente que todo gira alrededor de nuestra tierra.

La familia de vinos.

Finques incansables, un vino para cada finca. Sin coupages, sin modificaciones, sin clarificar, sin estabilizar, 100% territorio: el que sale de la vid es lo que te bebes. Cada año se elaborará las mejores partidas de uva y sólo una vez finalizado el proceso de envejecimiento (en su caso) se decidirá si la calidad es suficiente para embotellarlo como Finques Incansables. Es un vino diferente y tan especial que es el orgullo de Viníric. La gama Propòsit presenta vinos elegantes, tranquilos y gastronómicos. La unión de variedades autóctonas conducidas por una corta crianza. Los vinos Vella Lola son vinos alegres, frescos, afrutados y dinámicos. La gama Vella Lola presenta vinos tintos, rosados y blancos. Sus tintos son atrevidos, amables y equilibrados. Garnacha, variedad ampurdanesa por excelencia. Syrah, que le aporta una estructura firme. Ambas variedades conviven durante cuatro meses en barricas de roble francés. La gama de blancos Vella Lola muestran vinos jóvenes, directos, limpios, aromáticos, con buen cuerpo y muy expresivos. Elaborados con las variedades autóctonas de la zona: garnacha blanca, macabeo, xarel-lo y moscatel. Los Vella Lola rosados son golosos y frescos, 100% garnacha.

Calonge, un oasis agrícola.

Calonge, el escenario perfecto para el proyecto Viníric. La tierra, de tradición agrícola; El paisaje, alrededor del macizo de las Gavarres, que suaviza los veranos cálidos y secos y calma la tramontana. La zona tiene unos PHS elevados (6-7) y una materia orgánica baja que son parámetros adecuados para el cultivo de la vid. La vertiente meridional tiene un nivel freático elevado, punto importante que ha ayudado a la fijación de la agricultura en esta zona. Los suelos son de naturaleza aluvial compuestos mayoritariamente por gravas, arenas, limos y arcillas. Las precipitaciones de 400 l/m2, la proximidad del mar y la tramontana en receso de las Gavarres crean un microclima de temperaturas suaves en las diferentes estaciones del año. Allá del Empordà turístico y urbanizado el clima de Calonge es ideal para la viña, y sus vinos así lo expresan. Viníric es de Calonge y es Calonge al mismo tiempo.

David Saavedra y su fórmula para cumplir sueños. Propietario, viticultor y elaborador de la bodega Viníric, las palabras que le guían son pasión y perseverancia. Ha trabajado en diferentes bodegas, ha ido en busca de masías, naves y viñedos viejos, ha hablado con agricultores y propietarios; ha invertido la vida para llegar a hacer y conocer lo que más me gusta: transformar el fruto de las viñas en vinos con carácter propio. Siempre aparecen nuevos retos y cada cosecha es uno nuevo. Llegó al Baix Empordà por amor, el amor se fue y se quedó para trabajar los viñedos de la bodega. Metódico y observador, conoce cada palmo de tierra de los viñedos de Viníric.
