Tradición familiar.

La familia Cusiné, toma el relevo de la familia en los años 70 siendo hoy en día la tercera generación quien está al cargo de la dirección, Joan i Josep Cusiné Carol, dándole un aire fresco y moderno pero sin perder la tradición; y sus respectivas mujeres, María Elena Jiménez y Marta Casas, son las enólogas de la bodega aportando profundidad y elegancia a todos los vinos de Parés Baltà. Elaboran sus vinos con uvas de sus propios terrenos, repartidas en cinco fincas con climas, suelos y altitudes muy diferentes. Así se centran en dos lineas de trabajo, los microcuvées (vinos de producciones muy limitadas y características especiales), que provienen de terrenos con microclimas muy característicos y los vinos tradicionales de la casa, que se elaboran cada año intentando mejorarlos. Los vinos Parés Baltà de D.O Penedés son ecológicos: Desde sus inicios la bodega se ha diferenciado por su talante conciliador con la naturaleza, hasta el extremo de tener su propio rebaño de ovejas para el abonado, así como abejas polinizadoras. En el año 2004 recibió la certificación de cultivo ecológico., teniendo su propio rebaño de ovejas para fertilizar sus viñedos así como su propio panal de abejas para polinizar sus flores, pudiendo transmitir el auténtico carácter mediterráneo. A parte de elaborar vinos tranquilos, también hacen cava de la bodega Parés Baltà, pero siempre con la misma esencia: hacer vinos de calidad, interesantes, que transmitan el origen de la bodega.

Trayectoria.

Hoy en día esta familia, ha crecido en el sector vitivinícola y, a parte de tener esta bodega en la D.O.Penedés, ha fundado bodegas por otros rincones de España, como en la D.O.Q Priorat con Gratavinum y en la D.O.Ribera del Duero con Dominio Romano. Bodega fundada en el año 1790 y que desde entonces no ha dejado su tradición familiar de ir pasando de padres a hijos. Los vinos se elaboran en las 5 fincas que la familia posee en la zona de Pacs del Penedès, en terrenos que van desde los 170 a los 750 m de altitud, lo que favorece la producción de vinos con claras diferencias y estilos.
