La singularidad de los vinos de crianza biológica españoles es apreciada y admirada en todo el mundo. La Gitana es un claro ejemplo de tradición elaboradora y sabores actuales que siguen en pleno auge, fascinando y deleitando al aficionado. Bodegas Hidalgo-La Gitana presume de ser una de las más antiguas del marco de Jerez. A principios del siglo XVIII, puso los pies en estas tierras el pionero de la saga que se convertiría en una de las familias bodegueras más importantes de Sanlúcar de Barrameda, los Hidalgo. Así, desde 1972 la familia se dedica a la elaboración de manzanilla, alcanzando una merecida reputación de elaboradores de calidad a principios del siglo XIX. Desde entonces, el método de elaboración no ha cambiado: uvas procedentes de un viñedo propio, artesanía en la vendimia, vinificación mediante el sistema de soleras y criaderas y trasiegos manuales.

Bodegas Hidalgo La Gitana fue fundada en 1792 y desde entonces la firma ha pasado de padres a hijos, siendo hoy una de pocas empresas vinateras del marco controlada al cien por cien por la familia y dirigida por la quinta generación en línea directa del fundador. El nombre alude a su producto estrella, "Manzanilla La Gitana". Sus 70 hectáreas de viñedos se sitúan en dos de los mejores pagos: Balbaina y Miraflores. En las cosechas utilizan las uvas de sus propios viñedos y continúan con los métodos tradicionales de crianza, envejeciendo los vinos en botas de roble americano y trasegándolos como en el S.XIX.
