Historia.
La Vinícola de Nulles, con la Catedral del Vino como emblema, es la historia del esfuerzo de un pueblo para sacar adelante un sueño Un anhelo de esperanza que resulta casi imposible después de la gran desolación que causa la plaga de la filoxera. Son los principios del 1900, y tras centenares de años con plantaciones y elaboraciones vinícolas familiares, los habitantes de Nulles deciden unir sus recursos y conocimientos para crear el sindicato de San Isidro y levantar la bodega del pueblo, la Catedral del Vino de Nulles. Esta unión, se materializa en 1917, siendo la cosecha de 1920 la primera en llenar los nuevos depósitos de la bodega modernista. Este edificio emblemático, obra de Cèsar Martinell, uno de los máximos exponentes del movimiento modernista, destaca no sólo por su belleza, sino por reunir todas las cualidades necesarias para la elaboración de vino. Su arquitecto, consciente de su importancia, destaca tres grandes pilares que definen su lenguaje arquitectónico: la funcionalidad, el gusto por la tradición constructiva rural y la utilización de soluciones estructurales de gran proyección. De ahí la utilización de materiales autóctonos como la cal y la arcilla que pueblan las viñas para levantar el edificio, consiguiendo así que se mimetice y se integre con el entorno rural. El elemento más característico es el arco parabólico que nos proporciona un espacio amplio y funcional pero también de una gran belleza estética. Martinell busca el equilibrio, o como él decía: “las formas equilibradas son las que exhiben la belleza en sí mismas”. Los arcos parabólicos alcanzan su plena belleza con la luz, elemento muy importante que el arquitecto consiguió que influyera de manera favorable en la elaboración. El edificio hace la función de paraguas térmico que combinado con las tinas aportan al vino la estabilidad necesaria.
La viña.
La viña es la base de nuestro oficio. Tener pasión y amar la tierra son la esencia del trabajo bien hecho. En Nulles tenemos claro que sólo con la mejor uva obtendremos los mejores vinos, por eso el trabajo del enólogo comienza en el campo junto a los agricultores, los propios socios de la bodega que aportan la experiencia de muchas generaciones. Conocer el suelo y el clima que nos caracterizan hace posible obtener vinos únicos, vinos que son la expresión de un territorio. En Nulles nos encontramos con un clima cálido, templado y típicamente mediterráneo. Situado a tan sólo 12 km del mar, combina una excelente maduración debida a una gran cantidad de horas de sol, con una buena acidez otorgada por el mar que se traduce en unos vinos con una sensación muy refrescante. Desde el inicio de la bodega, trabajamos principalmente las variedades blancas autóctonas de la zona, Macabeo, Xarel·lo y Moscatel, que nos dan unos resultados excelentes. Pero también, desde hace tiempo, trabajamos otras variedades con gran acierto, como son Parellada y Chardonnay en blancos, y Tempranillo y Merlot en tintos. Las raíces, que se alimentan de una tierra de arcilla y cal muy rica pero bañada por pocas lluvias, dan unas producciones de uvas más bajas pero muy concentradas, lo que nos aporta la intensidad distintiva de nuestros vinos.
El impulso de un pueblo.
Por suerte, nuestros abuelos amaban la tierra y, a día de hoy, recogemos los frutos de aquella generación. La mayor parte de las 400 hectáreas propias de viñedo, repartidas entre los casi 100 socios de la Vinícola, están plantadas en vaso, lo que propicia poder extraer la mejor calidad, sobre todo cuando hablamos de viñas viejas de más de 80 años. Todos estos factores hicieron posible el inicio del embotellado en Nulles, En 1987 nace Adernats, la marca que aportará el reconocimiento a Nulles y a las generaciones de viticultores que lo han hecho posible. Adernats, nombre que proviene del conjunto de tierras más cercano a la bodega, se mantiene 25 años después como la marca de vinos y cavas de referencia en Tarragona con más de 17 productos embotellados.
