San Marzano es un pequeño pueblo en el centro de la región DOC de Primitivo di Manduria, una franja de tierra besada por los dos mares del Salento: el Jónico y el Adriático. En 1962, la denominación DOC todavía no existía, y el Primitivo di Manduria estaba lejos de convertirse en un vino de culto para los amantes del vino. En 1962, 19 viticultores de San Marzano, de las familias vinculadas por generaciones a la tierra, se unieron para fundar "Cantina San Marzano". Una figura importante en la bodega.
Francesco Cavallo fue nombrado presidente del consejo de administración en 1982. Una figura ardiente y visionaria, continúa haciendo planes para el futuro, mientras supervisa el presente de nuestra bodega. Él ha sido ininterrumpidamente el verdadero timonel de nuestra compañía.
